Pesto Sauce and Pasta

This is something I threw together for a quick meal. I had never made pesto sauce before but I will definitly be making it again. Next time I do this I am going to add more to it such as onion, chicken etc.

Ingredients:

McCormick Pesto Sauce (prepared as instructions on package)
Tomato Diced
Pasta of your choice. I used Barilla--Gemelli


Cook pasta to your liking (or if you follow directions :) cook as package directs), in smaller saucepan cook Pesto sauce and when pasta is done and drained add your pesto mix to it and diced tomatoes.

Serve with Broiled Garlic Toast YUM!!!


Swiss Mushroom Onion Burgers

These are super easy and not something I came up with myself obviously but I wanted to share them because they are so good.

Ingredients:
1 pound Ground Beef
Worcheshire sauce, few dashes
Canadian Steak Seasoning (or any seasoning of your choice)
Sliced Swiss Cheese
Hamburger Buns
Fresh Mushrooms sliced
1 medium onion
Tablespoon butter
Minced Garlic

In a bowl mix burger with Worchestershire sauce and seasonings of your choice make into patties. Grill burgers to your liking.

While burgers are grilling put Mushrooms, onion, butter, minced garlic and dash of Worchestshire sauce in foil, close tight and place on grill and let cook while burgers are cooking.

When burgers are done, take off grill and place on bun putting mushrooms on top of burger and a slice of cheese on top of mushrooms. (If you put cheese on before your mushrooms, they will just fall off if you put cheese over mushrooms and burger it holds it in one place)

I don't add Ketchup or Mustard but you can. :) Enjoy. Here are some pics!!

Chicken smothered in Raspberry Habenero Cream Cheese Sauce.

Ok so I didn't get this posted after I made it so here it is now. I don't really have a name for it because well I just threw it together.

What you Need:

4 chicken breasts
1 brick cream cheese
1/2 cup water (can use chicken broth if prefer)
1/2 jar Raspberry Habenero Sauce (from Pampered chef) (can use salsa or can rotel or anything really)

Cook Chicken in skillet until done. Remove chicken. In same skillet add cream cheese and water and cook until cream cheese is melted. Once melted add sauce of your choice (I have used Salsa, Rotel, etc) Slice Chicken into strips or chunks (whichever you prefer) and add back to sauce. Simmer for 5-10 min. Then it is ready to serve. After putting on plate put a little sauce over the top and you are ready to eat.

I served it with Potatoes, squash, onion and green bell pepper. Deviled Eggs, and Strawberries.

Tonight for supper

Tonight I am making something I call Smothered Chicken I guess. I will take pictures and post the recipe later. It is so good and easy. There are many different ways to make it as well. I haven't forgotten about the blog I just don't do a lot of cooking over the weekends so I didn't have anything to post. I will have several things this week to add. :)

Cucumber Salsa

This is a recipe I got from my Sister in Law, Ashley, who got it from someone else! It is such a good recipe for the summer time using fresh veggies from the garden.

Ingredients:
3 med sized cucumbers
1 can Rotel (drained)
1 pkg Dry Ranch packet (NOT BUTTERMILK)
Red, yellow and Orange Bell Peppers
1 medium purple onion

Dice cucumbers, onions and bell peppers (I use my manual food processor) Add Rotel and Dry Ranch packet and stir together. Let sit in fridge before serving and serve with Tortilla chips. :) ENJOY!!

I use the different colored peppers to make the salsa pretty and colorful. You can use just green peppers if you prefer, also I don't care for the taste of green so I choose the sweeter colored peppers.




Shredded Pork Nachos

So I had some more left over shredded pork and to use it up I decided just to make some nachos. Super easy and yummy. Pictures to follow:

Tostito Chips (I use scoops, get more on the chip that way)
Shredded Pork
Shredded Cheese

Layer together and microwave 30 seconds. :) To change it up a bit you can make BBQ Pork Nachos just by mixing BBQ sauce with your pork before putting it onto your chips. (I was going to do this but I didn't have anymore BBQ sauce and was lazy so I didn't make any either.)

When cheese is melted I put a little bit of Black bean and corn salsa on top for more variety! IT was yummy!!

BBQ Pork Quesidillas with BBQ Ranch Sauce

These Quesadilla's are super easy to make. I used left over shredded pork. Here is the recipe followed by pictures.
Tortillas (I used Spinach Herb)
Shredded Pork
BBQ sauce (I used Honey Barbque)
Shredded Cheddar cheese (a variety can be used. I also used cubed pepperjack cheese)

If you don't have leftover shredded pork, cook pork roast in crock-pot until tender and shred.

Mix pork with BBQ sauce and spread mixture on 1 tortilla, sprinkle with cheese or add your cheese cubes, cover with 2nd tortilla and cook. I have a Quesadilla Maker so  just put mine together in that and close the lid. If you don't have a quesadilla maker you can use a skillet or electric skillet, it will give you the same results.

BBQ Ranch Sauce

Your choice of BBQ sauce
Ranch (I use Hidden Valley, because I like the taste better)

Add ingredients to a bowl and stir. I don't measure I just add.

As you will notice most my recipes will just have what ingredients you need without the amount that is because I hardly ever measure anything unless I am baking. I just eyeball it and go from there.

Black Bean Stuffed Bell Peppers (Courtesy of Taste of Home)


‎4 Bell Peppers (any color)
1 Cup cooked brown rice
1 Cup chopped fresh Spinach
1 medium Onion Chopped
1 pkg fat free Cream Cheese, softened
1 can Black Beans drained and rinsed
1 can RoTel drained
Salt and Pepper to taste
Cumin, dash
Chili powder

Colby Jack shredded cheese

Mix everything together except shredded cheese and fill bell peppers, Top with shredded cheese. Cook at 350 degrees 30 minutes.

Chicken Fajitas with Homemade Black Bean and Corn Salsa

 HOMEMADE BLACKBEAN AND CORN SALSA
1 can black beans rinsed and drained
2 ears corn cut off cob--Can use canned or frozen
1 Med onion chopped
1 can Rotel undrained
1/2 yellow bell pepper
...1/4 cup lemon juice
Cilantro chopped

...Mix everything and enjoy with tortilla chips.

I didn't have an actual recipe I just threw it together :):)

4 Chix breast, boneless, skinless
1 pkg McCormik Fajita seasoning
1/2 cup water
Shredded lettuce
Premade Guacamole
Sour cream
Black bean and corn salsa (will post that recipe at the bottom)
Spinach herb tortilla
Shredded cheese

Marinate Chicken in Fajita seasoning with water for an hour. Grill chicken until done and slice. Add all other ingredients and roll in tortilla.

Something New and Different

Do you ever get tired of eating/cooking the same meals. I know I do, so that is why I have created this blog to share recipes that are different yet easy. (I don't do anything that is to hard haha) I am the mom of 3 boys so I am always busy so the easier the better.
